Zibibbo is a highly aromatic grape originating from Sicily, also known as Muscat of Alexandria.
Our Zibbibo is gloriously aromatic with bold notes of jasmine, lychee, rose petals & ginger nut. Our Zibbibo was hand harvested and made in the Hunter Valley region of NSW. We rested our fruit for 10 days on skins to maximise the floral aromatic properties this variety is well known for. We fermented the juice in Indian clay amphorae, known as Kothi.
Aroma
Intense floral notes of orange blossom, jasmine, and rose petals, lychee and ginger nut.
Skin Contact Influence: Enhanced complexity with earthy, herbal, and spicy tones—dried chamomile, sage, saffron, and orange peel and ginger nut
Palate
Body: Medium to full-bodied, with a slightly salty texture. Stone fruits like apricot and peach & candied citrus with earthy and ginger nutty flavours from phenolic extraction during skin contact.
Cellaring: Our wines are designed to drink from now up to 5 years cellaring.
Serve chilled.
